Dinner for Two

Veggie tacos with tofu, spinach, corn, goat cheese, and cilantro (my favorite)!  Served with peach mango salsa on top and a side of Chardonnay.  YUM!

Here's the recipe:

Serves 4Hands-On Time: 20m Total Time: 20m

Ingredients

Directions

  1. Heat the oil in a large nonstick skillet over medium-high heat.
  2. Add the tofu, chili powder, ½ teaspoon salt, and ¼ teaspoon pepper. Cook, tossing occasionally, until golden brown, 4 to 5 minutes.
  3. Add the corn. Cook, tossing, until heated through, about 2 minutes.
  4. Add the spinach and ¼ teaspoon each salt and pepper. Toss until wilted.
  5. Fill the tortillas with the tofu mixture, goat cheese, and salsa.
This is the picture oh how it's supposed to look.  The tacos we made are much better looking, right?!

I spent my morning running around town doing errands, while the cleaning lady did her weekly routine of cleaning, organizing, and picking up around the house.  Long story short.... I was having a spectacular morning and came home to a clean room.  What's there to complain about, right?  Well, I was completely shocked because I gave directions to neverrrr clean my room, mostly because I function in chaos (organized messes), but also because everything on my bed is DRY CLEAN only.  Maybe I wouldn't be so distraught if I didn't spend months picking out the specific duvet I have (with hand sewn embellishments  or if I didn't spend a fortune on it.  I don't sleep very well, so naturally I make my bedding as close to heaven as possible... she washed everything... and dried everything.  My duvet, pillow cases, sheets will never be the same again.  Not to mention there is now a rip in my duvet... Cheers to more sleepless nights!
